Basil Alfredo Zoodles

Ingredients

  • 2 serves zoodles or pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup butter beans
  • 1/2 cup raw cashews, soaked overnight 1/2 cup fresh basil leaves, packed
  • 1/4 cup plant-based milk
  • 1 lemon, zest and juice, optional
  • 1/4 cup nutritional yeast
  • 1 clove garlic
  • 1 tsp onion powder, optional
  • pinch any good-quality salt

Preparation

  1. Combine zoodles/pasta and tomatoes in a large bowl

  2. Add the remaining ingredients, to a high-powered blender and blend until extremely smooth

  3. If the ingredients are not blending, gradually add water until it blends into a thick sauce

  4. Pour sauce over zoodles/pasta and mix thoroughly
