Basil Alfredo Zoodles
Ingredients
- 2 serves zoodles or pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup butter beans
- 1/2 cup raw cashews, soaked overnight 1/2 cup fresh basil leaves, packed
- 1/4 cup plant-based milk
- 1 lemon, zest and juice, optional
- 1/4 cup nutritional yeast
- 1 clove garlic
- 1 tsp onion powder, optional
- pinch any good-quality salt
Preparation
Combine zoodles/pasta and tomatoes in a large bowl
Add the remaining ingredients, to a high-powered blender and blend until extremely smooth
If the ingredients are not blending, gradually add water until it blends into a thick sauce
Pour sauce over zoodles/pasta and mix thoroughly
