Broccoli and Cheese Frittata

Ingredients

  • 1 large potato, peeled and chopped into cubes
  • 1/2 head of broccoli, cut into florets
  • 1 onion, finely diced
  • 1 garlic clove, crushed
  • 6 eggs
  • 1 tbsp milk
  • 30g cheddar cheese, grated

Preparation

  1. Preheat the grill to high. Boil the potatoes in the bottom part of a steamer set for 5 minutes, then add the broccoli florets in the steamer pan above and cook for 8 minutes

  2. Meanwhile, drizzle some oil in a 20cm non-stick frying pan on a medium heat, cook the onions for a few minutes, then add the garlic and cook for a minute

  3. Drain the potatoes and add them, with the broccoli, into the frying pan

  4. Whisk the eggs and milk together in a bowl and pour over the other ingredients in the frying pan

  5. Sprinkle the cheese on top and cook on a low heat for 5 minutes until the sides begin to firm. Transfer to under the grill for 2 minutes or until the middle is firm and browned on top. Allow to cool slightly then slice and serve
