Broccoli and Cheese Frittata
Ingredients
- 1 large potato, peeled and chopped into cubes
- 1/2 head of broccoli, cut into florets
- 1 onion, finely diced
- 1 garlic clove, crushed
- 6 eggs
- 1 tbsp milk
- 30g cheddar cheese, grated
Preparation
Preheat the grill to high. Boil the potatoes in the bottom part of a steamer set for 5 minutes, then add the broccoli florets in the steamer pan above and cook for 8 minutes
Meanwhile, drizzle some oil in a 20cm non-stick frying pan on a medium heat, cook the onions for a few minutes, then add the garlic and cook for a minute
Drain the potatoes and add them, with the broccoli, into the frying pan
Whisk the eggs and milk together in a bowl and pour over the other ingredients in the frying pan
Sprinkle the cheese on top and cook on a low heat for 5 minutes until the sides begin to firm. Transfer to under the grill for 2 minutes or until the middle is firm and browned on top. Allow to cool slightly then slice and serve
