Cantonese Style Crispy Fried Noodles
Ingredients
- - Dark Soy Sauce 1 tbs
- - Sesame Oil 1/4 tsp
- - Shaoxing Wine 1/2 tbs
- - White Pepper 1/4 tsp
- - Thin Wheat Noodles 125g
- - Scallion 1, julienned
- - Beansprouts 1
Preparation
Boil noodles, as per packet instructions - set aside
Make a sauce by mixing soy, sesame oil, shaoxing wine, white pepper
Heat wok to high, add oil to coat, add cooked noodles and spread in a thin layer. DON'T STIR ❌ letting them sit will allow them to crisp up. After 3-4 mins flip them over and crisp up other side. Set aside once done.
Heat wok to medium, add oil, then stir fry the WHITE SCALLION JULIENNES
Add crispy noodles then gradually add sauce + green julienned scallions while stiring to mix well
Add beansprouts at the end and cook long enough so they start to turn translucent
