Cantonese Style Crispy Fried Noodles

Ingredients

  • - Dark Soy Sauce 1 tbs⁣
  • - Sesame Oil 1/4 tsp⁣
  • - Shaoxing Wine 1/2 tbs⁣
  • - White Pepper 1/4 tsp⁣
  • - Thin Wheat Noodles 125g⁣
  • - Scallion 1, julienned⁣
  • - Beansprouts 1 ⁣

Preparation

  1. Boil noodles, as per packet instructions - set aside⁣

  2. Make a sauce by mixing soy, sesame oil, shaoxing wine, white pepper ⁣

  3. Heat wok to high, add oil to coat, add cooked noodles and spread in a thin layer. DON'T STIR ❌ letting them sit will allow them to crisp up. After 3-4 mins flip them over and crisp up other side. Set aside once done.⁣

  4. Heat wok to medium, add oil, then stir fry the WHITE SCALLION JULIENNES⁣

  5. Add crispy noodles then gradually add sauce + green julienned scallions while stiring to mix well⁣

  6. Add beansprouts at the end and cook long enough so they start to turn translucent
