Caprese Pasta Salad

Ingredients

  • 2 cups pasta
  • 1.5 cups mixed baby tomatoes, halved
  • 1 cup mini mozzarella balls
  • 1/3 cup extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • handful fresh basil leaves, chopped
  • handful pine nuts
  • sea salt and pepper

Preparation

  1. Cook the pasta, leaving slightly al dente. Drain and set aside

  2. While the pasta cooks, mix together the olive oil, tomatoes and salt in a large pan over a medium heat. Keep stirring until the tomatoes have cooked through - approx 5 mins. In a separate pan, toast the pine nuts over a medium heat until golden

  3. Stir in the cooked pasta with the tomatoes and leave to cool (you don’t want the mozzarella to melt!). Add in the basil, pine nuts and mozzarella and stir in the balsamic. Season with salt and pepper to taste

  4. Leave for approx. 20 mins for the pasta to soak up the flavour of the sauce and then enjoy! I served mine with homemade pesto
