Carrot Coconut Thai Soup
Ingredients
- water fry onions until caramelized
- add 2 garlic cloves
- chopped fresh ginger
- 4 chopped carrots
- let it cook
- add 2/3 of a cup of coconut milk
- 1/2 cup veggie stock. Blend it
- season with sweet paprika
- tamari
- turmeric
- black pepper
- cook until it thickens
