Carrot Coconut Thai Soup
Ingredients
- onions
- 2 garlic cloves
- chopped fresh ginger
- 4 chopped carrots
- 2/3 cup coconut milk
- 1/2 cup veggie stock
- black pepper
- turmeric
- 1 tablespoon tamari
- sweet paprika
Preparation
Water fry onions until caramelized.
Add 2 garlic cloves, chopped fresh ginger, and 4 chopped carrots.
Let it cook for a bit.
Add 2/3 cup coconut milk and 1/2 cup veggie stock.
Blend the mixture.
Season with sweet paprika, tamari, turmeric, and black pepper.
Cook until it thickens.
