Carrot Coconut Thai Soup

Ingredients

  • onions
  • 2 garlic cloves
  • chopped fresh ginger
  • 4 chopped carrots
  • 2/3 cup coconut milk
  • 1/2 cup veggie stock
  • black pepper
  • turmeric
  • 1 tablespoon tamari
  • sweet paprika

Preparation

  1. Water fry onions until caramelized.

  2. Add 2 garlic cloves, chopped fresh ginger, and 4 chopped carrots.

  3. Let it cook for a bit.

  4. Add 2/3 cup coconut milk and 1/2 cup veggie stock.

  5. Blend the mixture.

  6. Season with sweet paprika, tamari, turmeric, and black pepper.

  7. Cook until it thickens.
