Carrot Coconut Thai Soup

Ingredients

  • water fry onions until caramelized
  • add 2 garlic cloves
  • chopped fresh ginger
  • 4 chopped carrots
  • let it cook
  • add 2/3 of a cup of coconut milk
  • 1/2 cup veggie stock. Blend it
  • season with sweet paprika
  • tamari
  • turmeric
  • black pepper
  • cook until it thickens
