Chicken Satay Skewers

Ingredients

  • x3 tbsp peanut butter
  • x2 tbsp soy sauce
  • x1 tsp lazy garlic
  • x3 tbsp curry powder
  • x1 lime
  • x1 tsp lazy ginger
  • 120 ml coconut milk
  • x2 tbsp honey
  • rice
  • skewers

Preparation

  1. Mix the peanut butter, soy sauce, lime juice, curry powder, ginger and honey in a bowl with a little water

  2. Flatten out the chicken, cut into strips and marinade for an hour

  3. Wrap the chicken round the skewer in an S shape and cook under grill

  4. Pop the remaining marinade into a pan with 120ml coconut milk and stir to make the sauce

  5. Serve with rice and lime
