Chick’n Satay with Rice, Aubergine and Cucumber Salad

Ingredients

  • 2-3 spring onions
  • red pepper
  • broccoli
  • 1 red chilli in 1 tbsp of sesame oil
  • tbsp of soy sauce
  • chicken

Preparation

  1. Fry off 2-3 spring onions, a handful of red pepper, broccoli and 1 red chilli in 1 tbsp of sesame oil and a tbsp of soy sauce for around 3 minutes

  2. Add your chicken if you’re using a meat replacement or omit if you just want veg (I used no chicken pieces from Iceland)

  3. Add some water and peanut butter and adjust measures for desired consistency. I’d start with 1tbsp of peanut butter and then just add more until it’s at the right thickness

  4. Add soy sauce to taste

  5. Top with fresh spring onion
