Cold Melon Soup
Ingredients
- 1 melon (1kg / 550g of the flesh)
- 360g pineapple tomato
- 280g cucumber (peeled)
- 1 yellow pepper
- 45g yellow onion
- 1 garlic clove
- 50mL Olive oil
- 30mL Xerès Vinegar
- salt&pepper
Preparation
Rougghly cut the veggies and remove the seeds
Place them in a blender and blend everything together until smooth
Strain through a sieve to have a nice orange liquid
Put in the fridge for a few hours, to serve it cold
Sprinkle some salt&freshly cracked pepper before serving
