Cold Melon Soup

Ingredients

  • 1 melon (1kg / 550g of the flesh)
  • 360g pineapple tomato
  • 280g cucumber (peeled)
  • 1 yellow pepper
  • 45g yellow onion
  • 1 garlic clove
  • 50mL Olive oil
  • 30mL Xerès Vinegar
  • salt&pepper

Preparation

  1. Rougghly cut the veggies and remove the seeds

  2. Place them in a blender and blend everything together until smooth

  3. Strain through a sieve to have a nice orange liquid

  4. Put in the fridge for a few hours, to serve it cold

  5. Sprinkle some salt&freshly cracked pepper before serving
