Cold Soba Noodles with Dipping Sauce

Ingredients

  • 1/4 cup sake
  • 1/2 cup mirin
  • 1/2 cup low sodium soy sauce
  • 1 cup dried bonito flakes
  • cold cooked soba
  • shredded nori
  • various vegetables (optional)

Preparation

  1. Boil 1/4 cup sake, 1/2 cup mirin, 1/2 cup low sodium soy sauce, and 1 cup dried bonito flakes for 5 minutes.

  2. Let the mixture cool and strain off the bonito flakes.

  3. Mix 1 part of the sauce with 3 parts cold water to make the dipping sauce.

  4. Add desired vegetables and shredded nori as preferred.

  5. Grab cold cooked soba noodles, dip them in the sauce, and eat by slurping and repeating.
