Creamy, Low Carb, Flavorful & Easy

Ingredients

  • 1 bag of frozen or fresh cauliflower rice
  • White Bella mushrooms
  • One fresh squeezed lemon, salt, pepper, garlic & kernel seasonings white cheddar seasonings to preference ⁣
  • —Finely diced Shallot & 1 sweet yellow onion⁣
  • —Mini pearl tomatoes- can omit but I love the color & flavor they add ⁣
  • —One light Swiss laughing cow wedge or whatever flavor you prefer- can also sub for a serving of cream cheese⁣
  • —Chicken Broth- adds flavor & keeps it moist ⁣
  • —Lean protein of choice if you want to add in extra protein to this meal, I love ground turkey or protein but this can also be meatless⁣
  • —Fresh Rosemary to garnish ⁣

Preparation

  1. You can roast the sweet onions 425 for 25 min or air fry @400 for 16 min or sauté them in a pan with coconut oil spray & then add the diced shallot

  2. Next, i would throw the roasted or air fried onions in a skillet with the raw mushrooms, let soften & add chicken broth to keep them cooking

  3. Then brown them

  4. You will have a side of the onions / mushrooms browned together to add in later on

  5. Onto the tomatoes, i broil on high heat for 8 minutes

  6. Now into a separate skillet (big one) bc this is where you will add everything into, brown the frozen cauli rice in coconut oil spray on high heat

  7. Keep stirring until browned / soft, then throw in one cup of mushrooms (or all but you can save some for another use), onions, handful of the blistered tomatoes & last but not least a light laughing cow wedge

  8. Simmering on low heat, add in spices you prefer & chicken broth to keep it from drying out

  9. You want it to be soft like real risotto so add enough that your cheese wedge or cream cheese can melt

  10. If your wanting to up the protein, the last part would be to add that already cooked meat

  11. Serve with fresh rosemary!
