Curried Sweet Potato & Carrot Soup

Ingredients

  • 1/4 cup coconut oil
  • 2 medium onions
  • 4 garlic cloves
  • 1 ginger
  • 1 tbsp curry powder
  • 1 1/4 tsp unrefined salt
  • pinch red pepper flakes
  • ground black pepper to taste
  • 4 large carrots, peeled and chopped
  • 2 sweet potatoes, peeled and chopped
  • 6 cups veg or chick broth
  • 2 tbsp local honey or maple syrup

Preparation

  1. Cook onions, garlic, ginger and spices first in coconut oil

  2. Then add veggies and cook a few more minutes

  3. Add broth

  4. Bring to a boil, reduce heat to low, cover, simmer 20 minutes

  5. Turn off heat, add honey, blend til smooth
