Curried Sweet Potato and Carrot Soup
Ingredients
- 1/4 cup coconut oil
- 2 medium onions
- 4 garlic cloves
- 1 inch ginger
- 1 tablespoon curry powder
- 1 1/4 teaspoons unrefined salt
- Pinch red pepper flakes
- Ground black pepper to taste
- 4 large carrots, peeled and chopped
- 2 sweet potatoes, peeled and chopped
- 6 cups vegetable or chicken broth
- 2 tablespoons local honey or maple syrup
Preparation
Cook onions, garlic, ginger and spices first in coconut oil.
Then add veggies and cook for a few more minutes.
Add broth.
Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes.
Turn off heat, add honey, and blend until smooth.
