Curried Sweet Potato & Carrot Soup
Ingredients
- 1/4 cup coconut oil
- 2 medium onions
- 4 garlic cloves
- 1 ginger
- 1 tbsp curry powder
- 1 1/4 tsp unrefined salt
- pinch red pepper flakes
- ground black pepper to taste
- 4 large carrots, peeled and chopped
- 2 sweet potatoes, peeled and chopped
- 6 cups veg or chick broth
- 2 tbsp local honey or maple syrup
Preparation
Cook onions, garlic, ginger and spices first in coconut oil
Then add veggies and cook a few more minutes
Add broth
Bring to a boil, reduce heat to low, cover, simmer 20 minutes
Turn off heat, add honey, blend til smooth
