Curried Sweet Potato and Carrot Soup

Ingredients

  • 1/4 cup coconut oil
  • 2 medium onions
  • 4 garlic cloves
  • 1 inch ginger
  • 1 tablespoon curry powder
  • 1 1/4 teaspoons unrefined salt
  • Pinch red pepper flakes
  • Ground black pepper to taste
  • 4 large carrots, peeled and chopped
  • 2 sweet potatoes, peeled and chopped
  • 6 cups vegetable or chicken broth
  • 2 tablespoons local honey or maple syrup

Preparation

  1. Cook onions, garlic, ginger and spices first in coconut oil.

  2. Then add veggies and cook for a few more minutes.

  3. Add broth.

  4. Bring to a boil, reduce heat to low, cover, and simmer for 20 minutes.

  5. Turn off heat, add honey, and blend until smooth.
