Easy Pasta

Ingredients

  • 1 tsp italian herbs
  • 1 zucchini, thinly sliced
  • 2 large handfuls of cherry tomatoes, halved
  • 250g (ish) gf penne (@sanremopasta)
  • 1 tsp tamari (@pureharvest)
  • 2 - 3 tblsp herby pesto (@rozas.gourmet is my fave!)
  • Cracked pepper
  • Optional: Chilli flakes, vegan parmesan, or nutritional yeast

Preparation

  1. Fry up the onion, garlic + herbs until just softened. Add zucchini and cook until soft. Stir through the tomatoes and allow all flavours to meld together

  2. Meanwhile, cook pasta according to packet directions. Drain, rinse + set aside

  3. Throw in the lentils, and season with pepper. Add a splash of tamari, stir, then add the pesto + combine well. Stir the pasta through the veggies + pesto

  4. Serve! Add any optional extras lile parmesan, or chilli flakes, so on
