Easy Pasta
Ingredients
- 1 tsp italian herbs
- 1 zucchini, thinly sliced
- 2 large handfuls of cherry tomatoes, halved
- 250g (ish) gf penne (@sanremopasta)
- 1 tsp tamari (@pureharvest)
- 2 - 3 tblsp herby pesto (@rozas.gourmet is my fave!)
- Cracked pepper
- Optional: Chilli flakes, vegan parmesan, or nutritional yeast
Preparation
Fry up the onion, garlic + herbs until just softened. Add zucchini and cook until soft. Stir through the tomatoes and allow all flavours to meld together
Meanwhile, cook pasta according to packet directions. Drain, rinse + set aside
Throw in the lentils, and season with pepper. Add a splash of tamari, stir, then add the pesto + combine well. Stir the pasta through the veggies + pesto
Serve! Add any optional extras lile parmesan, or chilli flakes, so on
