Easy Pasta Salad with Homemade Pesto

Ingredients

  • 1/2 red pepper
  • A big handfull of arugula
  • 5 pieces on sundried tomatoes
  • 2 tbsp pesto
  • Pasta for 1-2 pers

Preparation

  1. Cook the pasta. Meanwhile, chop the red pepper and the sundried tomatoes into smaller pieces. Add to a bowl together with the rest on the ingredients, including the pasta. Mix everything well

  2. For the pesto recipe: 2 dl basil (a big handfull), 1 dl arugula, 1 dl sunflower seeds, 0,5 dl oatmilk, 3 tbsp olive oil, 3 tbsp nutritional yeast, salt + pepper.

  3. Mix everything together in a food processor until you have a smooth pesto
