Easy Potato and Pepper Tacos with Chipotle Sauce

Ingredients

  • 2 large potatoes
  • 1 small onion
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1-2 jalapeño peppers (optional)
  • 1 Tsp minced garlic
  • 8-10 corn or 4-6 flour tortillas
  • salt and pepper to taste

Creamy chipotle sauce

  • 2-3 Tbsp chipotle in adobo sauce
  • 1/2 cup silken tofu
  • 1 garlic clove
  • 1/2 lime, juiced
  • splash of water

Preparation

  1. Dice potatoes, onion, bell peppers, jalapeño pepper and carrots if you’re using them.

  2. Turn pan on medium/high heat, add canola oil and garlic. Add diced onion and peppers to pan. Sprinkle with salt and saute on low/medium heat for about 10 minutes.

  3. Meanwhile peppers are cooking add diced potatoes to air fryer for 15-20 minutes on 350 degrees. Flip half way through to assure they cook evenly.

  4. While potatoes are cooking place all your chipotle sauce ingredients in a blender and blend until smooth. Taste and adjust ingredients as desired.

  5. Once potatoes are cooked and crispy, add to pan with pepper and onions. Mix well, add salt and pepper to taste.

  6. Warm up tortillas on a skillet and assemble your tacos. Drizzle creamy chipotle sauce on top and enjoy!
