Easy Vegan Avocado Pasta with Cashew Camembert
Ingredients
- pasta, cooked to instructions
- ✨ 1 (or 1/2) avocado, blended w/ some plant milk
- ✨ vegan cashew camembert (pricey, but worth the occasional treat)
- ✨ broccoli
- ✨ sweetcorn (off the cob)
- ✨ peas
- ✨ coconut bacon
- ✨ cashew parmesan

Boil your pasta
Meanwhile, chop n boil the veg
Blend the avocado with a dash of mylk until smooth
Drain pasta, pour over the avocado, stir through
Serve with the veg, sliced ‘camembert’, coconut bacon n cashew parm sprinkled on top!
