Easy Vegan Avocado Pasta with Cashew Camembert

Ingredients

  • pasta, cooked to instructions
  • ✨ 1 (or 1/2) avocado, blended w/ some plant milk
  • ✨ vegan cashew camembert (pricey, but worth the occasional treat)
  • ✨ broccoli
  • ✨ sweetcorn (off the cob)
  • ✨ peas
  • ✨ coconut bacon
  • ✨ cashew parmesan

Preparation

  1. Or 1/2) avocado, blended w/ some plant milk

  2. Vegan cashew camembert (pricey, but worth the occasional treat)

  3. Broccoli

  4. Sweetcorn (off the cob)

  5. Peas

  6. Coconut bacon

  7. Cashew parmesan

  8. Boil your pasta

  9. Meanwhile, chop n boil the veg

  10. Blend the avocado with a dash of mylk until smooth

  11. Drain pasta, pour over the avocado, stir through

  12. Serve with the veg, sliced ‘camembert’, coconut bacon n cashew parm sprinkled on top!
