Falafel

Ingredients

  • 1 cup of fresh parsley or more! or even half/half parsley/coriander)
  • • 1 onion cut in 4
  • • 4 cloves garlic
  • • 3 teaspoons cumin
  • • 1 teaspoon white pepper • 1.5 teaspoons coriander
  • • 2 teaspoons salt
  • • Half cup self raising flour

Preparation

  1. Chuck the herbs/onion/garlic in a food processor until chunky but well chopped

  2. Throw in the chick peas and get it to a crumbly consistency. Not too much. No paste

  3. Then stir through the flour. You might need more as you go. I use my hands here so I can feel the consistency

  4. Roll them in balls or do what I do and flatten them into big hamburger patty shapes so I use less oil when I shallow fry them

  5. YUM! (In the pic I have served it with half an avocado, a sprinkling of toasted sesame seeds, a dollop of hommus and pan-fried zucchini noodles)
