Homemade Katsu Curry with Mushrooms and Side Salad

Ingredients

  • 1 large onion
  • 2 carrots
  • 2 chillies
  • 3 cloves of garlic
  • Oil
  • Ginger paste
  • Curry powder
  • Salt and pepper
  • Soy sauce
  • Plain flour
  • 1 pint vegetable stock
  • 2 bay leaves
  • Mushrooms
  • Panko breadcrumbs
  • Sushi rice

Preparation

  1. Fry 1 large onion, 2 carrots, 2 chillies, and 3 cloves of garlic in oil for about 5 minutes.

  2. Add a little ginger paste, curry powder, salt, pepper, and soy sauce; cook for another 5 minutes.

  3. Add a bit of soy sauce and mix the vegetables with some plain flour.

  4. Add 1 pint of vegetable stock and 2 bay leaves; let it simmer for about 20 minutes.

  5. While the sauce simmers, coat mushrooms in a mixture of soy sauce and flour, then in panko breadcrumbs, drizzle with a bit of oil, season, and bake in the oven.

  6. Cook the sushi rice according to package instructions.

  7. Once done, remove the bay leaves from the sauce and blend it until smooth.
