Homemade Vanilla Cake with Frosting and Raspberries

Ingredients

Cake

  • 1 3/4 cups All-Purpose Flour
  • 1 cup Cane Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Oat Milk
  • 2 tsp Vanilla
  • 1/3 cup Extra Virgin Olive Oil
  • 1 Tbsp Apple Cider Vinegar

Frosting

  • 3 3/4 cups Powdered Sugar
  • 3 Tbsp Vegan Butter
  • 4 Tbsp Oat Milk
  • 2 tsp Vanilla
  • raspberries

Preparation

  1. Preheat the oven to 350°F. Add flour, sugar, baking soda and salt into stand mixer and mix together.

  2. Add the milk, vanilla, oil and vinegar and give it a mix until just combined.

  3. Grease two cake tins with coconut oil and cut parchment paper into circles to fit the bottoms. Divide the batter evenly between them. Bake for 30 minutes. Repeat the process to make four cakes.

  4. Let cakes completely cool down, double the frosting recipe, apply the frosting, and decorate with raspberries.
