Italian Wedding Soup

Ingredients

  • 4 c of homemade veggie broth
  • 1 c cooked kamut
  • 1-2 cups of prepared mushroom meatballs
  • chopped onion, garlic, and celery (stick to onion and shallots if you follow the African Biomineral Diet)
  • 1-2 key limes, juiced
  • bay leaf, parsley (omit if following the African Biomineral Lifestyle), dill, fennel seeds
  • 2 cups kale, chopped

Preparation

  1. In a pot, sauté onions and celery for about 2 or 3 minutes, and then add garlic and fennel seeds in for an additional minute. Add in cooked kamut and bay leaf, and sauté for an additional minute

  2. Pour in veggie broth & key lime juice. Season and allow mixture to come to a boil. Reduce, and allow to simmer for an additional 5 minutes. Toss in your cooked kale and chopped parsley/dill, and allow to cook for 30 seconds

  3. Pour soup in bowls, and drop 3 prepared meatballs in each bowl

  4. Finish with a drizzle of tahini, and enjoy with spelt toast
