Japanese Style Fried Rice

Ingredients

  • 1 tbsp vegan japanese kewpie mayo (or sub with vegan butter/oil)⁣
  • 1 cup day old cooked rice⁣
  • 1 green onion, sliced white and green parts seperated⁣
  • 1 slice mock meat, cut into small chunks (or smoked tofu)⁣
  • 1/3 cup frozen mixed veggies (peas and carrots)⁣
  • optional: some left over tofu scramble ⁣
  • 2 tsp soy sauce⁣
  • Salt and white pepper to taste ⁣

Preparation

  1. In a medium sized wok, add rice and mayo and mix until combined

  2. Over medium high heat, add the white parts of the scallion and mock meat to the rice and fry for 1 minute

  3. Add the mixed veggies and tofu scramble and toss with the rice

  4. Season with soy sauce, salt and white pepper

  5. Add the green parts of the green onion and toss for a few minutes until well combined

  6. Remove from heat, serve
