Katsu Chicken

Ingredients

  • x1 tsp turmeric
  • x1 tsp soy sauce
  • x3 tbsp mild curry powder
  • x1 onion
  • x2 cloves garlic
  • x1 wee bit of ginger
  • 350ml light coconut milk

Preparation

  1. Flatten the chicken down with a rolling pin then coat in egg, flour then breadcrumbs and repeat- pop in the oven for 35/40 mins

  2. Fry onions, garlic and ginger in a frying pan then add the curry powder, turmeric and flour followed by the coconut milk and soy sauce and stir as you bring it to the boil

  3. Cut chicken into slices and serve with the sauce and rice and I’ve added a little side salad - carrots, cucumber, coriander, red peppers and lime
