Katsu Curry

Ingredients

  • To make this katsu curry I fried 1 large onion
  • 2 carrots
  • 2 chillis and 3 cloves on garlic in oil for about 5 mins. Then
  • I added a lil squirt of ginger paste
  • curry powder
  • salt and pepper and soy sauce and cooked for another 5 mins or so. After that
  • I added a bit of soy sauce and mixed the veg with some plain flour. Next
  • I added a pint of veg stock n 2 bay leaves and left to simmer for about 20 mins. While that all simmered
  • I coated some shrooms in a mixture of soy sauce and flour and then panko breadcrumbs
  • drizzled in bit of oil
  • seasoned n then put in the oven to bake. I then put the sushi rice on to cook n waited for it all to be done. To finish off the sauce I took out the bay leaves and blended it all :)
