Lentils Gently Cooked in Red Wine

Ingredients

  • 4 linda mccartney sausages
  • 150g puy lentils
  • 1 large carrot
  • 1 large stalk of celery
  • 1 red onion
  • 3 cloves of garlic
  • 1 tbsp chopped fresh rosemary
  • 250ml red wine
  • 700ml veggie stock
  • 1/4 of a tsp of marmite
  • 1 tbsp tomato paste
  • 1 tbsp vegan butter

Preparation

  1. Pre-heat the oven to 190c

  2. Chop the carrot, onion and celery into little cubes and mince the garlic

  3. In a large saucepan begin to sauté the onion until just starting to brown, about 5 minutes, and then add the celery, carrot and garlic

  4. Sauté for another 3 or 4 minutes and then stir in the tomato paste

  5. Add the lentils and coat them in all the lovely juices and then pour in the wine, let is sizzle away for a minute and follow it with the stock, marmite and rosemary

  6. Season with salt and pepper, bring to a boil and reduce to a simmer for 25-30 minutes until the lentils are just tender

  7. Stir in the butter at the end to emulsify the sauce

  8. Cook the sausages according to packaging

  9. Serve all together and enjoy!
