Mango tempeh with avocado rice bowl

Ingredients

  • 1 mango
  • 2 packages tempeh
  • 1 big yellow onion
  • 3 cloves garlic
  • Salt and pepper for seasoning

Sauce

  • 3 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 2 tsp brown sugar
  • 1 tbsp lime juice
  • 1/2 tsp dark soy sauce (optional)
  • 4 tbsp water
  • 1 tbsp arrowroot powder

Preparation

  1. Mix well all the sauce ingredients and set aside.

  2. Heat oil in a pan, add garlic and sauté until fragrant, then add onions.

  3. Cook until onions are translucent, then add tempeh and mango.

  4. Stir for 2 minutes, then add the sauce mixture.

  5. Cook until the sauce thickens.

  6. Season with salt and pepper.

  7. Remove from heat and serve with rice, topped with favorite veggies.
