Mango tempeh with avocado rice bowl
Ingredients
- 1 mango
- 2 packages tempeh
- 1 big yellow onion
- 3 cloves garlic
- Salt and pepper for seasoning
Sauce
- 3 tbsp sriracha
- 1 tbsp soy sauce
- 1 tsp ground cumin
- 1 tsp ground ginger
- 2 tsp brown sugar
- 1 tbsp lime juice
- 1/2 tsp dark soy sauce (optional)
- 4 tbsp water
- 1 tbsp arrowroot powder
Preparation
Mix well all the sauce ingredients and set aside.
Heat oil in a pan, add garlic and sauté until fragrant, then add onions.
Cook until onions are translucent, then add tempeh and mango.
Stir for 2 minutes, then add the sauce mixture.
Cook until the sauce thickens.
Season with salt and pepper.
Remove from heat and serve with rice, topped with favorite veggies.
