Midweek Meals
Ingredients
- 1 tsp smoked paprika
- 2 crushed garlic cloves
- 1 low salt vegetable stock cube
- 1 glug of balsamic vinegar
- black pepper
- a squeeze of lemon juice
Preparation
Sauté an onion in a little olive oil
Add a tin of chopped tomatoes, fill the can with water and add that in too, bring to a simmer
Add 1 tsp smoked paprika, 2 crushed garlic cloves, 1 low salt vegetable stock cube, 1 glug of balsamic vinegar, black pepper, a squeeze of lemon juice
Pour in some lentils. I used 1 small handful of dried red lentils per person
Next add in any veggies you have. I added carrot, peppers, sweetcorn and courgette
Simmer and let the sauce thicken. You may need to add more water as the lentils cook
