Midweek Meals

Ingredients

  • 1 tsp smoked paprika
  • 2 crushed garlic cloves
  • 1 low salt vegetable stock cube
  • 1 glug of balsamic vinegar
  • black pepper
  • a squeeze of lemon juice

Preparation

  1. Sauté an onion in a little olive oil

  2. Add a tin of chopped tomatoes, fill the can with water and add that in too, bring to a simmer

  3. Add 1 tsp smoked paprika, 2 crushed garlic cloves, 1 low salt vegetable stock cube, 1 glug of balsamic vinegar, black pepper, a squeeze of lemon juice

  4. Pour in some lentils. I used 1 small handful of dried red lentils per person

  5. Next add in any veggies you have. I added carrot, peppers, sweetcorn and courgette

  6. Simmer and let the sauce thicken. You may need to add more water as the lentils cook
