Miso Tofu Tahini Stir Fry

Ingredients

  • ✨ 1/2 block firm tofu
  • ✨ 1 onion
  • ✨ 2 tsp tahini
  • ✨ 1 tbsp soy sauce or tamari
  • ✨ 1 heaped tsp miso
  • ✨ 1 tsp minced fresh ginger
  • ✨ pinch of garlic powder
  • ✨ 1 portion brown rice, cooked
  • ✨ broccoli
  • ✨ cucumber, chopped
  • ✨ sesame seeds
  • ✨ caramelised onion hummus

Preparation

  1. Mix the tahini, soy sauce, miso, ginger and garlic together until smooth, add water if necessary to be liquidy

  2. Slice the tofu into thin slices, dip in the marinate and leave to sit, flip over to coat the other side

  3. Meanwhile, sauté the onion (in some sesame oil) until soft, steam the broccoli and cook the rice

  4. Remove the tofu from the marinate, saving the marinade

  5. Heat a frying pan on a medium-low heat, add in a dash of sesame oil (if wanted) and place the marinated tofu in it, fry until slightly crispy and flip over

  6. At the same time, place the remaining marinate in a small saucepan and heat until just starts to boil and reduce a bit

  7. Plate up with the rice, veg, tofu, hummus, sesame seeds and pour on the leftover sauce
