Mushroom Soup

Ingredients

  • 400g mixed brown and white mushrooms chopped ⁣
  • 10g dried porcini mushroom soaked in hot water for 30 minutes⁣
  • 1 banana shallot or 1 red onion finely chopped⁣
  • 1 clove of garlic finely chopped⁣
  • 30g or 2 tbsp plain flour⁣
  • 250 ml milk⁣
  • 1/2 cup or 100ml fresh cream⁣
  • 1 ltr vegetable or chicken stock ⁣
  • 45g or 3 tbsp butter ⁣
  • 1 tbsp olive oil⁣
  • black pepper to taste⁣
  • 1/4 tsp nutmeg powder (optional)⁣
  • salt to taste⁣
  • 1/2 red chilli finely chopped (optional)⁣

Preparation

  1. Don’t chop anything

  2. Add the shallots, garlic and chilli (if adding), chop 5 seconds on speed 4

  3. Add butter, oil and flour, saute 3 minutes on 120 temperature on speed 1

  4. Add the mushroom, chop 10 seconds on speed 5

  5. Saute 5 minutes on 120 on speed 1

  6. Add stock, milk and season it well

  7. Cook for 10 minutes on 100 on speed 3

  8. Add cream and cook for 2 minutes on 90 on speed 3

  9. Blend for 2 minutes on speed 4-7 increasing the speed gradually

  10. Garnish and serve hot
