Paella
Ingredients
- 300g paella rice
- 1.3 litres veg stock
- 1 onion, chopped
- 2 peppers, chopped
- 2 garlic cloves, chopped
- 1 tin chickpeas, drained
- 1 tin chopped tomatoes
- 2 tbsp tomato puree
- 1 packet paella seasoning (i bought it from tesco)
- 1 tsp turmeric
- 1 tsp chilli flakes
- a pinch of salt and pepper
Preparation
Add the rice to a large pan and dry fry for five minutes
Add the veg stock, half the seasoning, tomato purée and tin of chopped tomatoes and cook for 15 minutes
In a frying pan add a little oil and the remaining ingredients to the pan and fry for 5 minutes
Take off the heat and leave until the rice is cooked
Stir the veg mixture into the rice and enjoy!
