Paella

Ingredients

  • 300g paella rice
  • 1.3 litres veg stock
  • 1 onion, chopped
  • 2 peppers, chopped
  • 2 garlic cloves, chopped
  • 1 tin chickpeas, drained
  • 1 tin chopped tomatoes
  • 2 tbsp tomato puree
  • 1 packet paella seasoning (i bought it from tesco)
  • 1 tsp turmeric
  • 1 tsp chilli flakes
  • a pinch of salt and pepper

Preparation

  1. Add the rice to a large pan and dry fry for five minutes

  2. Add the veg stock, half the seasoning, tomato purée and tin of chopped tomatoes and cook for 15 minutes

  3. In a frying pan add a little oil and the remaining ingredients to the pan and fry for 5 minutes

  4. Take off the heat and leave until the rice is cooked

  5. Stir the veg mixture into the rice and enjoy!
