Perfect Healthy Lemon Orzo Soup
Ingredients
- 1 yellow onion
- 5 cloves garlic
- 2 red bell peppers
- 1 zucchini
- 12 ounces mushrooms
- salt and pepper
- 1/2 teaspoon paprika
- 1 tablespoon fresh thyme
- 6 cups vegetable broth
- zest and juice of 1 lemon
- 1 bag chickpea orzo
- 2 handfuls spinach
- 1 bunch parsley
- handful of cherry tomatoes
- 1 can white beans
- 1 tablespoon coconut oil
Preparation
Melt 1 tablespoon coconut oil in a large dutch oven over medium heat.
Add onion and garlic to the pan and sauté until fragrant, then add red peppers, zucchini, and mushrooms, sautéing for another 4-5 minutes. Season with salt, pepper, paprika, and fresh thyme.
Pour in vegetable broth and lemon juice and bring to a boil. Reduce heat and simmer for 5 minutes.
Add orzo and simmer for another 5 minutes.
Stir in spinach, beans, parsley, cherry tomatoes, and lemon zest and let simmer until heated through.
Serve with fresh parsley.
