Perfect Healthy Lemon Orzo Soup

Ingredients

  • 1 yellow onion
  • 5 cloves garlic
  • 2 red bell peppers
  • 1 zucchini
  • 12 ounces mushrooms
  • salt and pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh thyme
  • 6 cups vegetable broth
  • zest and juice of 1 lemon
  • 1 bag chickpea orzo
  • 2 handfuls spinach
  • 1 bunch parsley
  • handful of cherry tomatoes
  • 1 can white beans
  • 1 tablespoon coconut oil

Preparation

  1. Melt 1 tablespoon coconut oil in a large dutch oven over medium heat.

  2. Add onion and garlic to the pan and sauté until fragrant, then add red peppers, zucchini, and mushrooms, sautéing for another 4-5 minutes. Season with salt, pepper, paprika, and fresh thyme.

  3. Pour in vegetable broth and lemon juice and bring to a boil. Reduce heat and simmer for 5 minutes.

  4. Add orzo and simmer for another 5 minutes.

  5. Stir in spinach, beans, parsley, cherry tomatoes, and lemon zest and let simmer until heated through.

  6. Serve with fresh parsley.
