Pulled Jackfruit
Ingredients
- jackfruit: 1 can drained and washed
- shallots: 3 finely sliced
- garlic: 2 cloves
- red chilli: 1-2
- balsamic vinegar: 1 t
- xylitol or sugar: 1 t
- tomato paste: 11/2 t
- bay leaves: 2
- smoked paprika: 1/2 t
- italian herbs: 1/2 t
- cumin powder: 2 t
- vegetable stock: 200ml
- olive oil: 1/2 t
- butter: 1 t
Preparation
Heat 1/2 t oil in a pan and add onions, xylitol, vinegar and bay leaves
Cook stirring till onions are caramelized
Add chilli, tomato paste and herbs and cook for a minute or so
Mix in jackfruit and cook with a lid on for 5-7 minutes
Transfer onto a baking dish, throw in garlic, pour vegetable stock and cover with tin foil
Bake in a preheated oven at 180c for 45 minutes mixing once
Once soft, mix in vegan butter and pull apart
