Pulled Jackfruit

Ingredients

  • jackfruit: 1 can drained and washed
  • shallots: 3 finely sliced
  • garlic: 2 cloves
  • red chilli: 1-2
  • balsamic vinegar: 1 t
  • xylitol or sugar: 1 t
  • tomato paste: 11/2 t
  • bay leaves: 2
  • smoked paprika: 1/2 t
  • italian herbs: 1/2 t
  • cumin powder: 2 t
  • vegetable stock: 200ml
  • olive oil: 1/2 t
  • butter: 1 t

Preparation

  1. Heat 1/2 t oil in a pan and add onions, xylitol, vinegar and bay leaves

  2. Cook stirring till onions are caramelized

  3. Add chilli, tomato paste and herbs and cook for a minute or so

  4. Mix in jackfruit and cook with a lid on for 5-7 minutes

  5. Transfer onto a baking dish, throw in garlic, pour vegetable stock and cover with tin foil

  6. Bake in a preheated oven at 180c for 45 minutes mixing once

  7. Once soft, mix in vegan butter and pull apart
