Quick Midweek Lentil Bolognese Sauce
Ingredients
- 1 onion
- a little olive oil
- 1 tin chopped tomatoes
- water (fill the tin)
- 1 tsp smoked paprika
- 2 garlic cloves
- 1 low salt vegetable stock cube
- 1 glug balsamic vinegar
- black pepper to taste
- a squeeze of lemon juice
- dried red lentils (1 small handful per person)
- assorted vegetables (e.g., carrot, peppers, sweetcorn, courgette)
- pasta (for serving)
- grated cheese (for serving)
Preparation
Sauté an onion in a little olive oil.
Add a tin of chopped tomatoes, fill the can with water and add that in too, then bring to a simmer.
Add 1 tsp smoked paprika, 2 crushed garlic cloves, 1 low salt vegetable stock cube, 1 glug of balsamic vinegar, black pepper, and a squeeze of lemon juice.
Pour in some lentils, using about 1 small handful of dried red lentils per person.
Add in any vegetables you have, such as carrot, peppers, sweetcorn, and courgette.
Simmer and let the sauce thicken, adding more water if necessary as the lentils cook.
Enjoy with pasta and a grating of cheese!
