Quick One-Pot Vegan Ramen
Ingredients
- 1 teaspoon Chinese 5 spice
- 10g dried mushrooms
- 260g pak choi cabbage
- 50g textured soy protein or protein of choice
- 150g sweet potato
- 1 clove garlic (optional)
- 2 tablespoons soy sauce
- 2 packages ramen noodles
- 1 liter water
- 2 teaspoons red miso
Preparation
Soak dried mushrooms in hot water for a few minutes to rehydrate
Chop the pak choi, sweet potato, garlic, and any other vegetables or proteins as needed
In a large pot, bring water to a boil
Add rehydrated mushrooms with their soaking liquid, chopped vegetables, soy protein, Chinese 5 spice, and soy sauce
Add ramen noodles and cook for about 5-7 minutes until noodles are tender and vegetables are softened
Turn off heat, stir in miso paste until dissolved, and serve immediately in bowls
