Quick One-Pot Vegan Ramen

Ingredients

  • 1 teaspoon Chinese 5 spice
  • 10g dried mushrooms
  • 260g pak choi cabbage
  • 50g textured soy protein or protein of choice
  • 150g sweet potato
  • 1 clove garlic (optional)
  • 2 tablespoons soy sauce
  • 2 packages ramen noodles
  • 1 liter water
  • 2 teaspoons red miso

Preparation

  1. Soak dried mushrooms in hot water for a few minutes to rehydrate

  2. Chop the pak choi, sweet potato, garlic, and any other vegetables or proteins as needed

  3. In a large pot, bring water to a boil

  4. Add rehydrated mushrooms with their soaking liquid, chopped vegetables, soy protein, Chinese 5 spice, and soy sauce

  5. Add ramen noodles and cook for about 5-7 minutes until noodles are tender and vegetables are softened

  6. Turn off heat, stir in miso paste until dissolved, and serve immediately in bowls
