Quinoa & Mushroom ? Stuffed Peppers

Ingredients

  • 1 teaspoon olive oil
  • 1 onion - finely chopped
  • 2 cloves garlic - finely chopped
  • 250gms shiitake or chestnut mushrooms ?
  • 4 peppers
  • 250gms cooked quinoa (i used @merchantgourmet ready cooked for ease of use)
  • salt & pepper to taste
  • 1-2 green chillies if you like it hot
  • 1-2 spring onions to sprinkle on top

Preparation

  1. Pan fry the onion in the olive oil until soft and add the garlic

  2. Next add the mushrooms and cook until soft

  3. Finally add the cooked quinoa, salt & pepper, sliced green chillies

  4. Stuff mixture into seeded peppers, drizzle with a little olive oil and bake in the oven at 180’ for about 15 minutes

  5. Sprinkle with spring onions & green chilli to serve
