Easy Quinoa and Tofu Power Bowl

Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1/2 teaspoon vegetable bouillon
  • tofu
  • fresh vegetables
  • greens

Sauce

  • fresh lemon juice
  • tahini
  • maple syrup
  • hot sauce
  • nutritional yeast

Preparation

  1. Cook 1/2 cup quinoa in 1 cup water with 1/2 teaspoon vegetable bouillon for extra flavor.

  2. Mix together fresh lemon juice, tahini, maple syrup, hot sauce, and nutritional yeast to make the sauce.

Assembly

  1. Cube the tofu and pan-fry until golden brown

  2. Chop fresh vegetables and greens as desired

  3. Assemble the power bowl by combining cooked quinoa, prepared tofu, vegetables, greens, and the sauce
