Rainbow Salad

Ingredients

  • kale
  • - cooked quinoa
  • - red: peppers, tomatoes
  • - orange: sweet potato, peppers, or tomatoes
  • - yellow: yellow squash, pepper or tomatoes
  • - green: avocado, cucumber, zucchini, cooked asparagus, broccoli
  • - purple: red onion, cabbage
  • - optional toppings: hemp seeds, pumpkin seeds, feta or goat cheese (if eating dairy)
  • - optional added protein: hard boiled eggs, chicken, salmon, shrimp, sugar-free bacon, or tuna

Preparation

  1. Serve in a big salad bowl, or meal prep for your week by storing in mason jars or containers

  2. Dress with olive oil, lemon, salt & pepper
