Rainbow Salad
Ingredients
- kale
- - cooked quinoa
- - red: peppers, tomatoes
- - orange: sweet potato, peppers, or tomatoes
- - yellow: yellow squash, pepper or tomatoes
- - green: avocado, cucumber, zucchini, cooked asparagus, broccoli
- - purple: red onion, cabbage
- - optional toppings: hemp seeds, pumpkin seeds, feta or goat cheese (if eating dairy)
- - optional added protein: hard boiled eggs, chicken, salmon, shrimp, sugar-free bacon, or tuna
Preparation
Serve in a big salad bowl, or meal prep for your week by storing in mason jars or containers
Dress with olive oil, lemon, salt & pepper
