Ingredients

  • 2 lbs tomatoes (halved)⁣⠀
  • 5-6 garlic cloves⁣⠀
  • 1 tsp smoked paprika⁣⠀
  • 3 shallots (halved)⁣⠀
  • 1/4 tsp dried oregano⁣⠀
  • 1 tbsp extra virgin olive oil⁣⠀
  • 2 cups vegetable broth⁣⠀
  • 1 tbsp balsamic vinegar⁣⠀
  • salt + pepper to taste⁣⠀
  • fresh basil⁣⠀

Preparation

  1. Preheat the oven to 400f/200c⁣⠀

  2. On a roasting tray, place the tomatoes, garlic cloves, and shallots

  3. Sprinkle with the smoked paprika and oregano, and drizzle with the olive oil

  4. Roast for 20 minutes

  5. Remove from the oven and add to a large pan

  6. Add the vegetable broth, chopped fresh basil, and balsamic vinegar

  7. Blend with a hand blender until completely smooth, or to your preferred texture

  8. Season with salt and pepper to your taste
