Rice Bowl with Roasted Brussel Sprouts

Ingredients

  • 1/2 c packed cilantro⁣⁣⁣⁣
  • 1/4 c fresh mint⁣⁣⁣⁣
  • 1/2 c packed parsley⁣⁣⁣⁣
  • 1/2 c packed basil⁣⁣⁣⁣
  • 3 cloves garlic⁣⁣⁣⁣
  • 2 t olive oil ⁣⁣⁣⁣
  • 1 t salt⁣⁣⁣⁣
  • 1/2 lemon juiced⁣⁣⁣⁣
  • 1 t hemp hearts⁣⁣, optional⁣⁣ brussels:⁣⁣⁣⁣
  • 1 bunch of brussel sprouts ⁣⁣⁣⁣
  • olive oil⁣⁣⁣⁣
  • s + p⁣⁣⁣⁣

Preparation

  1. Preheat oven to 425

  2. Wash and cut your brussels in half and toss in olive oil ~1-2 t

  3. Season with salt and pepper, place on a baking pan with a silpat mat or parchment paper

  4. Roast until crisp, about 20-30 minutes

  5. While those are cooking add all the ingredients for the sauce into a food processor or blender, and blend until a pesto-like consistency

  6. When the brussel sprouts are done cooking, toss in the herby sauce and serve warm
