Herbed Brussel Sprouts
Ingredients
- 1/2 c packed cilantro
- 1/4 c fresh mint
- 1/2 c packed parsley
- 1/2 c packed basil
- 3 cloves garlic
- 2 t olive oil
- 1 t salt
- 1/2 lemon juiced
- 1 t hemp hearts, optional
- brussels:
- 1 bunch of brussel sprouts
- olive oil
- s + p
Preparation
Preheat oven to 425.
Wash and cut your Brussels in half and toss in olive oil ~1-2 T.
Season with salt and pepper, place on a baking pan with a Silpat mat or parchment paper. Roast until crisp, about 20-30 minutes.
While those are cooking add all the ingredients for the sauce into a food processor or blender, and blend until a pesto-like consistency.
When the Brussel sprouts are done cooking, toss in the herby sauce and serve warm
