Roasted Cauliflower Steaks with Pesto
Ingredients
- 1 Head of Cauliflower
- Grape Seed Oil
- Salt & Pepper
Pesto
- 2 Cups of Basil
- 1/3 cup of Pine Nuts
- 1/2-2/3 cups @followyourheart grated Parmesan
- 2 cloves of Garlic
- 1 tsp of Lemon Juice
- Salt & Pepper to taste
- 1/4 - 1/3 cup Grape Seed Oil
Preparation
Remove as much of the core from the cauliflower while keeping the head intact.
Lightly rub a bit of oil over the entire cauliflower and season with salt and pepper.
Place the cauliflower on a baking sheet and bake at 375 for 1 hour.
In a food processor pulse all the ingredients except the oil together until everything is finely minced.
With the processor running, slowly add in the oil until you have a loose but paste-like consistency.
Once the cauliflower has cooled a bit, slice it into steaks and serve with the pesto.
