Roasted Cauliflower Steaks with Pesto

Ingredients

  • 1 Head of Cauliflower
  • Grape Seed Oil
  • Salt & Pepper

Pesto

  • 2 Cups of Basil
  • 1/3 cup of Pine Nuts
  • 1/2-2/3 cups @followyourheart grated Parmesan
  • 2 cloves of Garlic
  • 1 tsp of Lemon Juice
  • Salt & Pepper to taste
  • 1/4 - 1/3 cup Grape Seed Oil

Preparation

  1. Remove as much of the core from the cauliflower while keeping the head intact.

  2. Lightly rub a bit of oil over the entire cauliflower and season with salt and pepper.

  3. Place the cauliflower on a baking sheet and bake at 375 for 1 hour.

  4. In a food processor pulse all the ingredients except the oil together until everything is finely minced.

  5. With the processor running, slowly add in the oil until you have a loose but paste-like consistency.

  6. Once the cauliflower has cooled a bit, slice it into steaks and serve with the pesto.
