Roasted Cauliflower Steaks with Pesto
Ingredients
- 1 Head of Cauliflower
- Grape Seed Oil
- Salt & Pepper
Pesto
- 2 Cups of Basil
- 1/3 cup of Pine Nuts
- 1/2-2/3 cups @followyourheart grated Parmesan
- 2 cloves of Garlic
- 1 tsp of Lemon Juice
- Salt & Pepper to taste
- 1/4 - 1/3 cup Grape Seed Oil
Preparation
Remove as much of the core from the cauliflower while keeping the head intact.
Lightly rub a bit of grape seed oil over the entire cauliflower and season with salt and pepper.
Place the cauliflower on a baking sheet and bake at 375°F for 1 hour.
In a food processor, pulse the basil, pine nuts, grated Parmesan, garlic, lemon juice, salt, and pepper together until finely minced.
With the processor running, slowly add the grape seed oil until the mixture reaches a loose but paste-like consistency.
Once the cauliflower has cooled a bit, slice it into steaks and serve with the pesto.
