Salsa Pasta

Ingredients

  • 8 oz of pasta (i used 1 box of @eatbanza penne pasta)
  • 1 tbsp olive oil
  • 1/4 medium red onion, diced
  • 1 green bell pepper, diced
  • 1 handful of cherry tomatoes
  • 1 jalapeño, diced
  • 1 block of crumbled tofu
  • 2 tbsp soy sauce (use gluten free soy sauce if gluten free)
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp smoked paprika
  • 1 tsp sazón (or extra smoked paprika)
  • 1 cup jarred salsa
  • 1-2 tbsp tahini (optional)
  • 1/4 cup pasta water

Preparation

  1. Cook pasta according to package

  2. In a separate pan set to low-medium heat, add oil then add onion, peppers, and cherry tomatoes until onion is translucent

  3. Crumble tofu into the pan and sauté for about 1-2 minutes (add additional oil if tofu starts to stick)

  4. Add in soy sauce and all seasonings and sauté until fragrant

  5. Add in cooked pasta and salsa and stir to fully coat

  6. Stir in tahini and pasta water

  7. Stir until pasta is coated and sauce coats pasta

  8. Once done remove from heat and serve

  9. Add additional salt and pepper to taste
