Simple Legume Stew with Vegetables

Ingredients

  • 1 onion
  • 2 tbsp olive oil
  • 2 carrots
  • 2 sticks celery
  • 2 tbsp tomato puree
  • 2 cans legumes
  • 2 big handfuls greens
  • 1 veg stock cube
  • 1 can of tomato
  • 2 large potatoes
  • bay leaf
  • salt and pepper

Preparation

  1. Cook the onion in olive oil until soft.

  2. If using, add carrots and celery and cook for a few minutes.

  3. Add tomato puree and cook for a couple of minutes, stirring continuously.

  4. Add legumes, canned tomatoes, stock cube, bay leaf, and enough water to cover.

  5. If using, add potatoes, bring to boil, and simmer for 40-60 minutes until potatoes and legumes are soft.

  6. Add greens and cook for a few more minutes until wilted.

  7. Season and serve with bread or crackers.

Tips

  1. If using canned legumes, drain and use straight away; if dried, soak overnight, discard water, and cook before adding.

  2. Omit carrots and celery if not available.

  3. Instead of canned tomatoes, use fresh roasted and blended tomatoes if desired.

  4. Serve with olives and onion for extra flavor.
