Simple Mushroom Soup with Button and Porcini Mushrooms
Ingredients
- 400g mixed brown and white mushrooms chopped
- 10g dried porcini mushroom soaked in hot water for 30 minutes
- 1 banana shallot or 1 red onion finely chopped
- 1 clove of garlic finely chopped
- 30g or 2 tbsp plain flour
- 250 ml milk
- 1/2 cup or 100ml fresh cream
- 1 ltr vegetable or chicken stock
- 45g or 3 tbsp butter
- 1 tbsp olive oil
- Black pepper to taste
- 1/4 tsp nutmeg powder (optional)
- Salt to taste
- 1/2 red chilli finely chopped (optional)
Preparation
Don’t chop anything. Add the shallots, garlic and chilli (if adding), chop 5 seconds on speed 4.
Add butter, oil and flour, saute 3 minutes on 120 temperature on speed 1. Add the mushroom, chop 10 seconds on speed 5. Saute 5 minutes on 120 on speed 1.
Add stock, milk and season it well. Cook for 10 minutes on 100 on speed 3. Add cream and cook for 2 minutes on 90 on speed 3.
Blend for 2 minutes on speed 4-7 increasing the speed gradually. Garnish and serve hot.
