Simple Quick Wagamama Style Katsu Chicken

Ingredients

  • 2 chicken breasts
  • Breadcrumbs
  • 2 eggs
  • Wholemeal flour
  • 1 tsp turmeric
  • 1 tsp soy sauce
  • 3 tbsp mild curry powder
  • 1 onion
  • 2 cloves garlic
  • a small amount of ginger
  • 350ml light coconut milk

Preparation

  1. Flatten the chicken with a rolling pin, coat in egg, flour, then breadcrumbs, and repeat. Bake in the oven for 35-40 minutes.

  2. Fry onions, garlic, and ginger in a frying pan. Add curry powder, turmeric, and flour, then coconut milk and soy sauce. Stir and bring to a boil.

  3. Cut the chicken into slices and serve with the sauce, rice, and a side salad made of carrots, cucumber, coriander, red peppers, and lime.
