Simple Quick Wagamama Style Katsu Chicken
Ingredients
- 2 chicken breasts
- Breadcrumbs
- 2 eggs
- Wholemeal flour
- 1 tsp turmeric
- 1 tsp soy sauce
- 3 tbsp mild curry powder
- 1 onion
- 2 cloves garlic
- a small amount of ginger
- 350ml light coconut milk
Preparation
Flatten the chicken with a rolling pin, coat in egg, flour, then breadcrumbs, and repeat. Bake in the oven for 35-40 minutes.
Fry onions, garlic, and ginger in a frying pan. Add curry powder, turmeric, and flour, then coconut milk and soy sauce. Stir and bring to a boil.
Cut the chicken into slices and serve with the sauce, rice, and a side salad made of carrots, cucumber, coriander, red peppers, and lime.
