Simple Vegan Zucchini Fritters for a Quick Meal

Ingredients

  • 1 large or 2 small zucchini
  • 1/2 tsp sea salt
  • 1/2 T oil
  • 1 T ground flax
  • 1 tsp minced garlic (or powder)
  • 2 T nutritional yeast
  • 1/2 onion, finely diced
  • 1/4 cup chickpea flour
  • 1 T fresh or dried basil

Preparation

  1. Grate the zucchini, sprinkle with sea salt, and place into a clean dish towel in a bowl. Let it sit for at least 10-15 minutes.

  2. Squeeze out any remaining liquid from the zucchini before removing it from the dish towel.

  3. Stir together the dry ingredients, then add in the zucchini and mix well.

  4. Heat a frying pan over medium heat and add oil.

  5. Shape the mixture into desired sized patties and fry on each side for about 5 minutes or until browned and crispy.

  6. Enjoy immediately, optionally with cashew sour cream (recipe referenced externally).
