Simple Vegan Zucchini Fritters for a Quick Meal
Ingredients
- 1 large or 2 small zucchini
- 1/2 tsp sea salt
- 1/2 T oil
- 1 T ground flax
- 1 tsp minced garlic (or powder)
- 2 T nutritional yeast
- 1/2 onion, finely diced
- 1/4 cup chickpea flour
- 1 T fresh or dried basil
Preparation
Grate the zucchini, sprinkle with sea salt, and place into a clean dish towel in a bowl. Let it sit for at least 10-15 minutes.
Squeeze out any remaining liquid from the zucchini before removing it from the dish towel.
Stir together the dry ingredients, then add in the zucchini and mix well.
Heat a frying pan over medium heat and add oil.
Shape the mixture into desired sized patties and fry on each side for about 5 minutes or until browned and crispy.
Enjoy immediately, optionally with cashew sour cream (recipe referenced externally).
