Vegan Slow Cooker Chilli with Vegetables

Ingredients

  • 1 large red onion
  • 2 cloves garlic
  • 1 pack of nakedgloryuk mince
  • 1 tin of kidney beans
  • 1 tin of black beans
  • 1 courgette
  • 3 large tomatoes
  • 3 tins of chopped tomatoes
  • tomato purée
  • 2 peppers
  • button mushrooms
  • bunch of coriander
  • tbsp of cumin
  • smoked paprika and chipotle lime seasoning
  • 1 large red chilli
  • tsp chilli flakes
  • tbsp BBQ sauce
  • tbsp of miso paste
  • 4 dark chocolate squares
  • salt and pepper
  • sprinkle of original red bisto

Preparation

  1. Add all ingredients except bisto to the slow cooker.

  2. Cook in the slow cooker for several hours until done.

  3. Add a sprinkle of original red bisto to thicken the chilli at the end.

  4. For vegan sour cream, mix mayo, lemon juice, and spring onions.

  5. Serve the chilli with brown rice and the vegan sour cream.
