Soy Milk Rice Porridge
Ingredients
- Soup base:
- - 1/2 cup kombu dashi (or 1/2 cup water + 2 tsp dashi granules)
- - 1 cup soy milk
- - 3/4 - 1 cup cooked rice
- - Kabocha
- - Carrots
- - Bok Choy
- - Shiitake mushrooms
- - Silken tofu
- - Sugar snap peas
Preparation
Basically just add the soup base into a pot over medium high heat along with all the vegetables
Let it simmer until the vegetables are nice and cooked and then add in the rice
Turn off the heat and just let it sit for 3 minutes until the rice is heated through
Serve and top it off with green onions and sesame seeds
