Spiced Braised Beef Stew

Ingredients

  • 1/2 teaspoon ground mastic
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon cardamom
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 3 bay leaves
  • 5 cardamom pods
  • 1 piece beef thigh meat
  • 1 medium onion, quartered
  • 1 tablespoon sugar
  • 1 medium tomato, quartered

For sautéing

  • 1 tablespoon ghee
  • 1 medium onion, sliced
  • 4 cloves garlic, crushed
  • 2 green chili peppers, chopped
  • 1 large red bell pepper, cut into small slices

Preparation

  1. In a bowl, place the mastic, cardamom, cumin, coriander, paprika, salt, and pepper and mix to combine

  2. In a pot, heat the ghee, add the meat and stir several times until it turns golden brown

  3. Sprinkle half the amount of spices, sprinkle sugar on the meat, and continue sautéing

  4. Add bay leaves, cardamom pods, onion, tomato, and continue sautéing

  5. Cover the meat with boiling water, cover the pot, and let it cook until done

  6. Remove the meat, let it cool, then cut into cubes as desired

  7. In a skillet, heat the ghee, add onion, garlic, green pepper, and sauté lightly

  8. Add the meat, sprinkle the remaining spices, sauté until it gets a nice color, then serve
