Spicy Kimchi Soup

Ingredients

  • Garlic: 3 cloves, chopped
  • Ginger: 1 tbsp, chopped
  • Hot pepper: 1 tsp
  • Onion powder: 1 tsp
  • Kimchi: 1/2 cup, drained and finely chopped
  • Chili flakes: 1 tsp
  • Vegetable stock: 3 cups
  • Hot watter: 1 cup
  • Enoki Mushroom: 1 pack
  • Firm tofu: 1 pack
  • Bok choy or Spinach: 1 pack (200g)
  • Noodle: 2 packs, cooked and drained
  • Salt and pepper: as required

Preparation

  1. In a bowl add chopped garlic, ginger, onion powder, chili flakes, hot pepper, salt, and pepper and mix them

  2. Pour it in a pan on a medium heat and stir it for 2 minutes, add kimchi and stir for another 2 minutes

  3. Add vegetable stock and water

  4. When it’s boiling add noodles, mushroom, tofu and bok choy (or any other greens, like spinach)

  5. Leave it for 15-20 minutes

  6. For serving add carrots, pickles, shallots, fresh chilies and bean sprouts

  7. Enjoy
