Spinach & Halloumi Fritters Topped with a Perfect Poached Egg
Ingredients
- 1 medium carrot
- 8 cubes frozen spinach leaves (defrosted and cooked in the microwave for a few minutes)
- 125g halloumi
- 1/2 a red onion - finely chopped
- few sage leaves
- 2 tablespoons flour
- 1 egg
- salt & pepper to taste
- rapeseed oil to fry
Preparation
Grate the carrot and halloumi, cook the spinach in the microwave & squeeze out the water
Add all the ingredients together in a bowl and mix well
Form small fritter shapes using your hands and fry in a little oil for 2-3 mins each side - eat right away for delicious crispy fritters! Enjoy
