Spinach & Halloumi Fritters Topped with a Perfect Poached Egg

Ingredients

  • 1 medium carrot
  • 8 cubes frozen spinach leaves (defrosted and cooked in the microwave for a few minutes)
  • 125g halloumi
  • 1/2 a red onion - finely chopped
  • few sage leaves
  • 2 tablespoons flour
  • 1 egg
  • salt & pepper to taste
  • rapeseed oil to fry

Preparation

  1. Grate the carrot and halloumi, cook the spinach in the microwave & squeeze out the water

  2. Add all the ingredients together in a bowl and mix well

  3. Form small fritter shapes using your hands and fry in a little oil for 2-3 mins each side - eat right away for delicious crispy fritters! Enjoy
